This cuvée is a crystal wine of great aromatic purity. A subtle nose revealing fresh aromas and anise notes. The attack is silky and enveloping and stretches to iodine notes. A chenin with almost a tannic structure, elegant and unusual, a great wine with food.
Pair with a sea bream carpaccio with chermoula dressing (coriander, mint, lemon, olive oil, garlic, paprika). Typically good with fish, white meat or poultry cooked with lemon... or on exotic dishes.
The name "Ephata" means "be opened" in Greek.
An agronomist by trade, Thomas, spent his formative years working in Champagne, Burgundy, Provence and California before settling down in the schistrich lands of Anjou Noir with his partner Charlotte in 2008. Together they started Terre De l’Élu (formerly known as Clos de l’Elu), which tends to eight different grape varieties, covering 20 hectares of organically farmed land in the heart of the Loire. In 2018, the duo decided to relinquish the word “Clos” which is reserved only for appellation wines. Due to the restrictions imposed under the appellation rules, Charlotte and Thomas say “we prefer to give priority to our freedom and creativity rather than trying to make wines that do not resemble us.”
